Hey Guys. I am super excited about this recipe and can’t wait for you to try it. Its a big bowl of the Caribbean and I love it.

The sailing season is coming to an end very quickly and although I am excited to go back to Vancouver and see my friends and family, I really really don’t want to leave. What I am excited about is going to Bonaire in September for 3 months. We are in the beginning stages of building a house and I cant be any happier about it. It took us 6 years of travelling to finally figure out where we wanted to live and in the end there was only one choice, Bonaire.

Most people are probably like “Where is Bonaire, never heard of it” and before we went there we had no idea it was there either. Most people probably know of an Island Called Aruba. Tons of resorts, a top honeymoon destination blah blah blah. Its kinda right beside it, 30 minute plane ride. To us, its a perfect island. World class kiteboarding and windsurfing, arguably the best diving, snorkelling and marine life in the Caribbean due to strict water regulations, and a bonus that its below the hurricane belt so yay No Hurricane season.

Oh … and the most beautiful pink water you could imagine!

And a flamingo sanctuary on top of it all. Did you know that they are born white and turn pink because of all the brine shrimp that they eat? I didn’t know that either but pretty neat eh!

Can you tell I love the place or what. I could go on and on but this post really isn’t about Bonaire but you can probably guess you will be hearing lots about it

Cuban Grapefruit Mojo Bowl With Fried Plantain and Fresh Mint

Here are a few reasons that make this big bowl of Caribbean goodness so delicious

A traditional Mojo is made with fresh Orange Juice which you can easily substitute in this recipe but down here in the Caribbean we get the sweetest juiciest grapefruits and I think it goes perfect with this dish. Also, if pork is not your think you can easily substitute chicken

So pour yourself a cold beer with some fresh lime, perhaps play a little Bob Marley in the background and enjoy this Caribbean inspired meal

Cuban Grapefruit Mojo Bowls With Fried Plantain And Fresh Mint

Fresh Grapefruit Citrus Mojo marinated into melt in your mouth pork tenderloin and delicious fried sweet plantains. Whats not to love
Ingredients
  • [br][b]Grapefruit Mojo[/b]
  • 1/4 Cup Grapefruit Juice
  • 1/4 Cup Lime Juice
  • 1/4 Cup Olive Oil
  • 4 Cloves Garlic, Minced
  • 2 Tbl. Fresh Mint, Chopped
  • 1 Tbl. Jalepeno, Diced
  • Salt
  • Pepper
  • 1/2 Pork Tenderloin, Trimmed and Cubed
  • [br][b]Fried Plantains:[/b]
  • 1 Plantain, Sliced 1 inch thick
  • Vegetable Oil
  • Salt
  • [br][b]To Serve:[/b]
  • 1/2 Avocado, Sliced
  • Black Beans
  • Rice
  • Lime Wedges
  • Fresh Mint
Instructions
  1. Combine all the Grapefruit mojo ingredients and set aside. Skewer the cubed pieces of pork tenderloin (should be 4 medium sized skewers) and place in a shallow container. Pour 3/4 of the marinade over top and set aside for 20 minutes
  2. Once pork is marinated, it wont need long due to the amount of acid, preheat a grill pan over high heat or a barbecue. Grill pork skewers for a few minutes on each side of until still slightly pink in the middle. This wont take long
  3. While the pork is cooking, put a small pan over medium heat and add half an inch of vegetable oil in it. Once hot, add plantain, frying in batches if necesarry, until golden on both sides. Drain on paper towels and season well with salt
  4. Now assemble, fill two bowls with about a half a cup of cooked rice and top with cooked black beans (if using) slices of avocado, pork swewers, fried plantain, mint and fresh lime wedges. Top with remaining mojo sauce
  5. Serve with ice cold beer with lime wedges
