Also, just have to apologize for not writing a post sooner. This last week has been busy to say the least. We had 3 of Rob’s business friends come down and those were a couple late nights which made me not so productive the next day to say the least. I have also had some what of writes block and every time I opened my computer to type I just ended up starring at the screen for 30 minutes. Luckily this weekend provided me with a funny story

Saturday morning we all woke up with a few cobwebs in the head. They boys decided they wanted to go diving so I took the opportunity to have some quiet time at the apartment, listen to some music and chill out. (I blame the delicious Scotch that I was introduced to on Friday Night) An hour goes by, then two, then three and then onto the fourth. After two and a half hours I knew something was up. Its a small island it should not have taken that long

Of course when they walk in Rob looks at me and says “You wont believe what happened.” I knew it I secretly thought to myself. They had went diving with the car keys, why I don’t know, and had dropped them in the ocean. Then Rob had to hitch hike back to the airport, get a new car and drive back to pick them up. Oh and lets not leave out the fact that it was the middle of the day, 30 degrees out and there was zero shade on the beach

Oddly enough, as soon as he got back to pick them up another group of divers had just come out of the water and said “Did you guys loose some car keys?” I mean, what are the odds that they found them. I was never so happy that I decided to stay home in my life. I felt refreshed and ready to tackle the night and they felt like freshly cooked lobsters.

Even though they suffered (just a little bit) I had a great story to tell. Thanks!

Well lets get back to the food now. So I don’t exactly know where the caesar salad came from (No not Italy) but I feel like the conversation kinda went like this ….

Customer: I feel like a salad

Waiter: Ok, well can interest you in a spinach salad with a light strawberry vinaigrette?

Customer: No, nothing healthy. What about something with Mayo

Waiter: (Confused Face)

Customer: And Cheese. Lots of parmesan Cheese

Waiter: …

Customer: And you know what, top it with some salty anchovies

Waiter: ….

Customer: Thanks

And bam the Caesar Salad was invented. Seems legit doesn’t it?

Well I just googled it apparently it was invented in Tijuana. Key Word “Apparently.” Im sticking with my story

Caesar himself rolled the big cart up to the table, tossed the romaine in a great wooden bowl, and I wish I could say I remembered his every move, but I don’t. They only thing I see again clearly is the eggs. I can see him break 2 eggs over that romaine and roll them in, the greens going all creamy as the eggs flowed over them. Two eggs in a salad? Two one-minute coddled eggs? And garlic-flavored croutons, and grated Parmesan cheese? It was a sensation of a salad from coast to coast, and there were even rumblings of its success in Europe. – Julia Child

Caesar Salad Devilled Eggs With Crispy Parmesan
Recipe Type: Appetizer

Prep time: 15 mins
Cook time: 10 mins
Total time: 25 mins
Serves: 4
Ingredients
  • 4 Hard Boiled Eggs
  • 1/4 Cup Finely Grated Parmesan
  • 4 Anchovies Packed In Olive Oil
  • 2 Sun Dried Tomatoes Packed In Olive Oil
  • 2 Tbl. Mayo
  • 2 Tbl. Caesar Salad Dressing
  • Panko Bread Crumbs
  • Salt
  • Pepper
Instructions
  1. Place a small pot of water over the stove and once boiling, carefully place the eggs in with a large spoon and cook for 10 minutes. Remove and place in ice water. Set aside
  2. While the eggs are cooking, finely chop the anchovies and lightly crisp in a hot pan. Drain on paper towels. In the same pan, add the parmesan and cook for 1-2 minutes or until crispy. Remove from the heat
  3. Once the eggs are cool, peel and cut in half. Remove the yolks and place in a bowl with the mayo, sun dried tomato oil and caesar salad dressing. Season with salt and pepper and set aside
  4. To assemble, divide the yolk mixture equally into the egg white halves then sprinkle with the anchovies, bread crumbs and a piece of the parmesan crisp
  5. Enjoy your bite size yumminess
