Roasted Pepper And Sun-dried Tomato Fettuccini

Ingredients
  

  • 3 Roasted Peppers (Yellow, Orange or Red)
  • 1/2 Cup Oil Packed Sun Dried Tomatoes
  • 1 Tbl Roasted Garlic w Olive Oil
  • 1/4 Cup Parmesan Cheese, Grated
  • 1 Pound Fettuccini
  • 3 Tbl Basil, roughly chopped plus some for Garnish
  • 1 Red Pepper Flakes, To Taste
  • 1 Salt
  • 1 Pepper, Fresh Cracked

Instructions
 

  • Combine peppers, sundried tomatoes, garlic and parmesan into a food processor. Add enough oil to blend it into a paste. Season with salt and pepper. Feel free to add more roasted garlic if you want a more pronounced garlic flavour
  • Meanwhile bring a large pot of salted water to a boil. Cook the pasta according to directions reserving the pasta water
  • Add the roasted pepper paste to a pan and add enough of the reserved pasta water to make a sauce. Add the pasta and toss to combine
  • Serve topped with chilli flakes, fresh pepper and parmesan. Garnish with fresh basil
