Watermelon Gazpacho With Fresh Basil And Balsamic Glaze

Well I have to say this year Christmas was one of the most relaxing so far. When I was young we would always have Christmas Dinner on Christmas Eve, that way we could wake up, open presents and have leftover turkey sandwiches that were way over sized and then relax. Oh, and if you ask me the leftover turkey sandwich and soup is something I look forward to more than the actual meal itself.

Every year we usually have a group of friends that come down to the boat and on Christmas morning I wake up and make a huge breakfast, have Mimosas and open presents. Then we go out on the water for the day before heading back and cooking turkey dinner. This year we had Christmas dinner on Christmas Eve because our friends were having dinner with their parents on Christmas. Dinner was excellent (as always) and the next morning was even better. We slept in, had turkey sandwiches for a late breakfast / lunch, watched silly Christmas movies and just relaxed. It was amazing!

New Years was spent with a bunch of friends, a little too much wine and a whole lots of laughs.

So here we are, in 2017 and I am sure everyone has set their own resolutions for themselves. What I have decided to do is give up meat and seafood for 1 month. I already eat a ton of Vegetarian meals as it is so its not like I am going from eating meat three times a day to completely cutting it out so hopefully it wont be too difficult. So it is only fitting that the first post of the New Years is of course Vegetarian but also for the rest of the month … obviously

I love the idea of replacing watermelon with the majority of the tomatoes as for my personally I find it even lighter although surprisingly filling. There are so many healthy items in this Gazpacho to make you feel amazing and set a healthy precedent for 2017.

Watermelon Gazpacho With Fresh Basil And Balsamic Glaze

Ingredients
  • [br][b]Gazpacho:[/b]
  • 1 Med. Tomato, Sliced
  • 1 Cup Watermelon, Cubed
  • 1/2 Jalepeno, De-seeded
  • 1 Tbl. Chopped Red Onion
  • 1 Tbl. Apple Cider Vinegar
  • 1/2 Red Pepper, Cubed
  • 1/4 Cup Olive Oil
  • 1 Tbl. Fresh Oregano
  • 1 Tbl. Fresh Basil
  • Juice of 1 Lime
  • Salt
  • Pepper
  • [br][b]Toppings:[/b]
  • 1/2 Cup Watermelon, Cubed
  • Lime
  • Olive Oil
  • Feta
  • Balsamic Glaze
  • Basil Leaves
Instructions
  1. Combine the tomato and watermelon into a food processor and blend to combine. Add the remaining ingredients besides the salt and pepper and blend until desired consistancy, You can keep it chunky or blend it longer for a smoother feel
  2. Season with salt and pepper and let chill in the fridge for at least an hour (It is best if the main ingredients are chilled before)
  3. When ready to plate, divide equally between two bowls and top with watermelon, feta, and basil leaves and lightly drizzle with olive oil and balsamic glaze. Serve with a lime wedge
  4. Enjoy!
