I must confess, I am a snack monster. One of the side effects of having food on your mind all day

No Bake Coconut and Date Energy Bites

There used to be this jar of nuts that I would keep out on the kitchen counter so if I was feeling a little peckish I could just grab a few and my snack monster would be satisfied. But oh no, a few never seemed to be enough so the jar had to be removed to a safe distance behind the cupboard. And I don’t even want to explain to you what happens when there is a pack of Sour Patch Kids on disposal. These are the reasons why there is a limited amount of oh so delicious snack food on the boat. The main item that I can never seem to resist, Ketchup Chips. If you don’t know what those are it most likely means you are not Canadian. Luckily they don’t sell them down here so there is no need to resist

One of the main problems is is that throughout the day I am constantly either looking at food, cooking food, taking photos of food, writing about food and looking at new ideas for food. Watching the Food Network or any cooking show always gets me as well, actually I think it makes everyone hungry how can it not right?

Speaking of which, this may sound a little odd but as much as I am not looking forward to leaving the boat in 14 days (insert sad face) I am looking forward to watching a little cooking TV. We don’t have cable on the boat so we can only rely on Netflix and the movies that we have downloaded. But, unfortunately there are not many cooking show out there on Netflix and I miss it. Luckily Top Chef is on iTunes but because it isn’t released until months after it airs I always know who wins. I try not to give it away to Rob but he always seems to pick who’s wins in the first two episodes anyways.

Its been almost a year now and I am actually getting really excited to go back home. Mainly because I haven’t seen my mom in that time and also my Best Friend Daniela. It has been two years since we have seen each other and I could not possible wait another day!

Oh and Canadian Milk, it just tastes better.

These last couple of weeks I have been taking advantage of the sunshine as apparently in Vancouver right not it is a chilly 12 degrees. Here is Grenada, it’s about 30 degrees at the moment so unless Vancouver decides to warm up … just a little, I am considering packing my parka from Everest.

Anyways, back to this snacking business. If you are like me and cant help but have a small snack or two throughout the day why not make it a healthy and delicious one so you don’t feel so guilty. There are so many reasons why you will love these as much as I do

No Bake Coconut and Date Energy Bites
Recipe Type: Snack

Prep time: 5 mins
Cook time: 40 mins
Total time: 45 mins
Serves: 16
Ingredients
  • 1 1/2 Cup Pitted Dates
  • 3 Tbl. Cocoa Powder
  • 5 Tbl. Unsweetened Coconut
  • 3 Tbl. Oatmeal
  • 1 Tbl. Sugar (Optional)
  • Pinch of Salt
  • 1-2 Tbl. Water
  • Unsweetened Coconut / Sweetened Coconut for Dusting
Instructions
  1. Add all the ingredients, except the coconut for dusting, into a blender and pulse to combine.
  2. Add 1 – 2 Tablespoons of water until mixture comes together
  3. Measure out even size portions, you can do this with a cookie scoop, and roll into smooth balls
  4. Roll each in the remaining coconut (I used a mixture of unsweetened and sweetened coconut) and place into a covered bowl
  5. Refrigerate for at least 30 minutes so it firms us
  6. Enjoy!
