5 Ingredient Lime and Cilantro Guacamole

Cinco de Mayo Guacamole

Just as North America has taken over St. Patricks day, holding bigger celebrations that Ireland, it has also now surpassed Mexico’s Cinco de Mayo parties. Makes sense, nothing like having an excuse to eat excessive amounts of tacos and drink endless pitchers on Margaritas on a Wednesday night. For thousands of Mexicans though, this day isn’t about cheap beer and Tequila, it’s a day to celebrate the Victory at the battle of Puebla against the French occupation in 1862.

But … If your like me and you just feel like kicking back and enjoying some beer and tequila this Cinco de Mayo then make sure you whip up this super easy and delicious guacamole. A perfect creamy snack to be had with some ice cold Corona’s. Although this year a Cinco De Mayo party does not seem to be on the agenda as we are travelling through South Korea and there doesn’t seem to be a whole lot of Mexican restaurants floating around.

So, admittingly so I have a slight addiction if not full on obsession with Guacamole. It is just so fantastic that a surprise runs over me every time someone tries it they are not instantly hooked. My friend Brett had taken me to this amazing Mexican restaurant in Toronto called Grand Electric one night where they boast some of the best tacos around. Well, I ordered a plate of Guacamole and Chips to start and then 3 mini bite size tacos to follow. Probably should have shared more because in the end around 90% of the Guacamole ended up on my plate and there was no room left for the tacos, not even bite size ones. So what if some of my meals end up being chips and dips, seems perfectly reasonable to me.

Avocado are incredibly nutritious and have a ton of great health properties

-Full of vitamins and Fiber
-More potassium than a Banana (Hangover Cure?)
-Assists in absorbing nutrients
-Fit into almost every dietary restriction

And yes, I do hear the few of you that are out there saying “Hey! Avocados are high in fat and calories” and that would be absolutely correct to say BUT … they are healthy fats. There is a difference. And no one is asking you to eat 5 avocados a day. Everything in moderation.

Cinco de Mayo Guacamole

Guacamole is so versatile and there are so many items you can add to it. All you need to do is to start with avocado and salt and the rest is up to you. I like to add tons of lime because of my slight citrus obsession, cilantro, garlic, onion, salt and pepper. Ahhh …. So many obsessions in one bowl.

Once you make it, you can start experimenting with anything you like. Try adding some chilli flakes if you want some added heat, some tomato for a salsa style guacamole or some sweet corn. Make it tropical by adding diced mango or some feta cheese for a Greek twist.

No matter how you choose to enjoy it, I promise there will be none left. Unless you add something weird …. like marshmallows, or raisins, no one would appreciate that.

Serves: 2-4
Ingredients
  • 2 Ripe Hass Avocado
  • 1 Clove Garlic, Finely minced
  • 2 Tbl. Lime
  • 2 Tbl. Chopped Red Onion
  • 2 Tbl. Cilantro
  • 1/4 Tsp. Salt
  • Pinch of fresh ground pepper
Instructions
  1. Start by cutting the avocado in half and removing the pit. Next, take the knife and cut the flesh in a criss cross pattern being careful not to cut through the skin
  2. Take a spoon and scoop the avocado into a bowl. Discard the skin
  3. Add the remaining ingredients and mash until you reached a desired consistency. You can either do this in a mortal and pestle or with a fork. I prefer to leave the guacamole a little chunky for some texture
  4. Taste, and adjust your seasonings.
  5. Serve with some tortilla chips
