Well I know everyone back home in Canada is because from what I have seen from the countless photos is that is had been relentlessly snowing for 2 weeks and an average temperature of about zero degrees.

Here in Bonaire it is slightly a different story. It is “Winter” so the temperature has been a little cooler with an average of 29 degrees. Oh and while people do have Christmas trees the island is covered with Cactus and people decorate them by putting Santa Hats on them. Oh Christmas in the Caribbean!

I have a question, has anyone used a microwave / oven combination? I have not owned a microwave in over 9 years. I don’t ever plan on ever owning one, to me there is no point. But, we recently moved into a Vacation rental over Christmas and it as you guessed it came with a microwave / oven. I bought a huge turkey for Christmas dinner and I wanted to turn it on and make sure that it worked. First off, there are metal sides and metal screws on the back so when I turned it on it created quite the reaction and started sparking everywhere and blew the fan in the other room.

So At this point it seemed like we were on to plan B and were just going to BBQ the turkey for Christmas. I have done this before but our friends have a coal BBQ and that I have never done before. This morning however the apartment manager came over and cleared up the fact that if it was on Microwave mode (which i didn’t even realize it was on) everything had to be removed from the oven. Well yes this makes sense. Anyways long story short he is going to put signs on the other microwave ovens in the other apartments and incase your wondering Yes, I felt a little silly

At least I don’t have to figure out how to cook a turkey on a Coal BBQ this year … Maybe next year

Well lets get down to talking about this delicious super Festive Hummus platter. I think having lots of appetizer / tapas / antipasto or whatever you call if for any type of special occasion of Holiday. First appetizers are delicious, second it takes the pressure off people asking what time Dinner is going to be ready at. I always give an estimate for Christmas dinner is anyone really on time. Martha Stewart probably I bet your her dinner parties are down to the second. Speaking of which Martha if you ever want to invite me for dinner I will be on the next plane

Hummus is one of my favourite snacks as well and I also love the fact of how filling it is. Fun fact, Chickpeas have as much protein ounce for ounce as meat so it is a great Vegan alternative to meat

And why just make one flavour when you can make three. Here are just a few reasons why I love this Hummus platter so much

Its a perfect appetizer for this Christmas dinner. Just don’t do what I did and eat half the platter then realize you can’t eat anything for the rest of the day because you are so full. I couldn’t help it I was all alone when I made this and then realized it was way too much for one person but dig right in and well, it was so delicious I couldn’t stop.

Ingredients
  • [br][b]Basic Hummus:[/b]
  • 1 15 Oz Can ChickPeas, Drained, 1/4 Cup liquid Reserved
  • 1/4 Cup Olive Oil
  • 1/2 Cup Tahini
  • Juice 2 Lemons
  • 2 Cloves Garlic
  • Salt
  • Pepper
  • [br][b]Basil Hummus:[/b]
  • 1/3 Basic Hummus
  • 1 Tbl. Basil Pesto
  • 1 Tbl. Pine Nuts
  • Fresh Basil
  • Olive Oil
  • [br][b]Harissa Hummus:[/b]
  • 1/3 Basic Hummus
  • 2 Tbl. Harrissa
  • [br][b]Antipasto:[/b]
  • Toasted Pita
  • Olives
  • Cherry Peppers Stuffed With Cheese
  • Sun Dried Tomatoes
  • Carrots
  • Bell Peppers
  • Caper Berries
  • Pine Nuts
  • Pepperocini
  • Tomatoes
  • Lime Wedges
  • Feta
Instructions
  1. To make the basic hummus, combine all the ingredients and blend for about 1 minutes or until silky smooth. Season with salt, pepper and additional lemon if needed. Blend once more to incorporate
  2. Divide the hummus equally into three bowls. Add one tablespoon of pesto to one bowl and stir to combine. Place on a platter and top with pine nuts and fresh basil
  3. For the harissa hummus, combine another bowl with 1 tablespoon of harissa and mix well. Add to the platter and top with an additional tablespoon of hummus.
  4. Add the third bowl of plane hummus to the platter and make a well in the middle. Fill with olive oil
  5. Fill the rest of the platter with the antipasto and garnish with fresh oregano and basil
  6. Enjoy!
